Spicy Honey-Brushed Chicken Thighs


I was SO surprised when I was looking back through my blog to see what my picture looked like when I posted this recipe before, only to find that I didn't ever share it with you! It is one of our favorite go-to meals for so many reasons - its healthy (found this on a Weight Watchers board years ago), its super duper easy, and we normally have all the ingredients on hand, making it a great "Crap, whats for dinner?" type of meal.

Oh, did I mention its so tasty? :) As the title hints, it is a spicy dish - but you can tone down the cayenne if you want (I normally do since Lance Jr doesn't like a ton of heat).  Then the honey/vinegar combo that you baste the chicken with is an amazing compliment to the heat - I just can't rave enough over how great this dish is! Shame on me for keeping this one all to myself...

Spicy Honey-Brushed Chicken Thighs
Serves 4

2 teaspoons garlic powder
2 teaspoons chili powder
1 teaspoon kosher salt
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon cayenne pepper
8 boneless, skinless chicken thighs
6 tablespoons honey
2 teaspoons apple cider vinegar
cooking spray

1.  Preheat broiler.

2.  Combine first six ingredients in a large bowl.  Add chicken to bowl; toss to coat.  Place chicken on a broiler pan coated with cooking spray.  Broil chicken 5 minutes on each side.

3.  Combine honey and vinegar in a small bowl, stirring well.  Remove chicken from oven; brush 1/4 cup honey mixture on chicken.  Broil 1 minute.  Remove chicken from oven and turn over.  Brush chicken with remaining honey mixture.  Broil 1 additional minute or until chicken is done.

* Alternatively, you can grill the chicken, which is what we normally do*
