This is the other batch of cookies I made for our care package to our deployed sailor. When I first bought our iMac ( <3 ) I bought a recipe program for it (that program is worthy of a whole 'nother post, I'll have to write about that). Anyways, this interestingly-titled recipe was one that came with the MacGourmet program, and as I was purging recipes that I knew I wouldn't use, this one I decided to hang on to.
I really liked these cookies. They were simple to make, and I had fun doing the stamp-with-sugared-glass trick. The cookies had a crumbly consistency (aka messy) and were really light with a great flavor. This one is a keeper!
Impatient Person's "I'm Hungry" Cookies
Yields 3 dozen cookies
1 cup unsalted butter, softened
8 ounces cream cheese, softened
1 1/2 cups sugar
1 tablespoon vanilla
3 cups flour
1 tablespoon baking powder
1. Cream butter and cream cheese in large mixer bowl. Beat in sugar until smooth. Beat in egg and vanilla. Stir in flour and baking powder. Chill several hours.
2. Heat oven to 375℉. Roll dough into small balls. Place on ungreased cookie sheet. Flatten with a glass that has been dipped in vanilla sugar (sugar in which you have stored a vanilla bean) or plain sugar.
3. Bake 10 to 15 minutes, until the edges are lightly browned. Cool on wire racks.
