So...confession time - I always pack on tons of weight over the winter. I seem to think I can hide behind baggy sweatshirts and jackets and keep on chowing down on the yummy comfort foods and sweets, but by the time the sun starts warming up in my neck of the woods, I start to realize that hey! That is a really silly (and very unhealthy!) cycle to be putting myself in annually!
And here I am, yet again, dreading all the sleeveless shirts and the poolside, and back "on track" to eating healthier and *hopefully* break my vicious cycle. Tonight's dinner was one I found long, long ago on a Weight Watchers board, and now that the hubs is away, I can finally try it out for dinner (he doesn't do broccoli).
This dish is incredibly simple to make, I mean, come on! Look at the directions! And this isn't fine cuisine, but I really, really loved this pasta! It was very light and refreshing and filling enough to be a main meal. I think its simplicity was what struck me, and it just worked. Well, the kiddos may beg to differ, but whatever - they'd eat fudgecicles and ketchup for dinner every night if I'd let them.
Broccoli and Garlic Pasta
1 cup FF chicken broth
2 cloves garlic, finely chopped
1/8 teaspoon black pepper
1/2 teaspoon dried basil
3 cups fresh broccoli
8 ounces uncooked penne
1 tablespoon lemon juice
1/4 cup grated Parmesan cheese
1. Combine broccoli, broth, garlic, pepper, and basil in a sauté pan. Bring to a boil. Cover and cook for about 3 minutes, or until broccoli is crisp-tender.
2. Meanwhile, cook and drain penne. Add penne to broccoli and toss. Add lemon juice and parmesan. Enjoy!
