Here is a really fun and figure friendly (HAHA!) appetizer I found on the Pioneer Woman's site a while ago. I tried these for the first time a year or two ago, and they did not last at all in the house! These little suckers are insanely wonderful, and my only complaint is that it takes so darn long to bake!
This year, though, the hubs had a brilliant idea of keeping a few on the side to grill while the main batch was baking, and grill he did! We couldn't decide which batch we liked better, the grilled or the baked, but both were amazing in their own ways. (By the way, if you haven't grilled bacon before, you HAVEN'T lived! Just be cautious for fires since they drip so much grease).And the weird looking ones in the photo? Those are veggie ones for Thing One. I didn't try it as I'm not a fan of veggie bacon, but she loved it, so I was very pleased. The next time you plan on having guests over, prepare these before they stop by and pop them in the oven - the aroma will make them act like the dog in the Beggin' Strips commercial - baconbaconbaconbaconBACON!!
Holiday Bacon Appetizers
Club Crackers (as many as desired)
thin sliced bacon, package cut in half
grated Parmesan cheese (with Romano)
1. Lay crackers on a cookie sheet, face up.
2. Spoon 1 teaspoon of cheese over each cracker.
3. Wrap bacon piece around each cracker, fitting it snugly and completely covering cracker. Place crackers on a baking sheet with a rack.
4. Bake at 250° for two hours.
**Can be frozen – thaw and warm up in oven for about 10 minutes.
