Easy Cheesy Chili Chicken



This isn't a new recipe for me, yet I couldn't help but share one of my most favorite meals ever!  I found this recipe a while back on Foodnetwork.com  and fell deeply, madly in love with this.  I had to modify the original recipe since the hubs wouldn't be into the onions, peppers, or cooked tomatoes, so if those interest you, you can use the original recipe.  The seasoning combo is stellar and rad and awesome and tubular and....any other 80's slang you can think of!  It has just a hint of heat, but if you'd like to kick it up, definitely add as much cayenne as you'd like.  Like I said, this is one of my most favorite dishes, so I highly recommend you give this a try!

Easy Cheesy Chili Chicken
Serves 4

2 tablespoons olive oil
2 tablespoons fresh cilantro, chopped
1 tablespoon chili powder
1 tablespoon cumin
2 teaspoons kosher salt
1 clove garlic, chopped
1/2 teaspoon black pepper
1/8 teaspoon cayenne
4 boneless, skinless chicken breasts
4 ounces Colby Jack cheese


1.  Preheat oven to 400˚.

2.  Whisk together oil and all ingredients but chicken and cheese.  Once combined, add chicken, turn to coat.

3.  Bake about 20 minutes.  Remove from oven immediately and top with cheese.  Serve as the cheese melts.
