Baked Chicken with Mushrooms and Mozzarella Cheese

Tonight I was standing in front of my freezer not knowing what in the world to make.  My bags of boneless skinless chicken breasts were staring at me, but I am somewhat burned out on it.  Seeing as how I am running low on food, I was stuck with making due with chicken.

I found this recipe on a Weight Watchers board a while back and decided to give this a try.  Its super easy to make and pretty quick too.  This dish was really good, but it wasn't anything out of the ordinary. That doesn't mean I won't make this again, don't get me wrong, but I just want to be honest about when a recipe doesn't scream out me.  Since I do love cheese and mushrooms (MMM!!) odds are that I'll be throwing this simple dish together again.  It was pretty good served over plain rice and you can spoon the extra cheesy broth mixture over it.  And did I mention it has mushrooms???

Baked Chicken with Mushrooms and Mozzarella Cheese
Serves 6

6 boneless skinless chicken breasts
1/4 teaspoons paprika
1/2 pound sliced fresh mushrooms (or more if desired)
1 tablespoon butter
1/2 cup chicken broth
3 green onions, chopped
1 garlic clove, minced
1/2 teaspoon salt
1/8 teaspoon pepper
3/4 cup shredded mozzarella cheese (or more if desired)


1.  Arrange chicken in a 13x9 baking dish coated with Pam. Sprinkle with paprika. Bake uncovered at 350˚ for 15 minutes.

2.  Meanwhile in a large nonstick skillet, saute mushrooms in butter for 5 minutes.  Add chicken broth, green onions, garlic, salt and pepper. Bring to a boil.

3.  Pour broth over chicken and bake 10-15 minutes longer, or until chicken juices run clear.
Top with cheese and bake 3-5 minutes, until cheese is melted.
