Apple Salad

Despite all the junk I seem to make all the time, I am always on the search for delicious, healthy snacks and meals, especially ones that are kid friendly. This apple salad (found on WW, of course) definitely fits the bill. Please don't mind how icky the picture may look - my pictures do no justice, especially in this case. The salad can be passed as a snack or even as a dessert since its sweet, and I'm all for giving my kids fruit for dessert! I'm normally not a big marshmallow fan, but they really are special in this salad, and so are the walnuts, which in my opinion, really make the difference in this dish (I didn't have any on hand, but when I stopped by the store afterwards and picked some up, it made a huge difference). My kids loved this so much, and I even got the approval of a very picky husband! This is definitely worth trying!

Apple Salad
Serves 12

1 1/2 cup fat free milk
3 cups apples, chopped
4 ounces Cool Whip Free
1 package (.3 oz) instant SF/FF Butterscotch pudding mix
1 cup mini marshmallows
8 ounces crushed pineapple
1/2 cup grapes
1/2 cup walnuts, optional

1. Make the pudding with the milk until thick; set aside.

2. Chop apples into bite size pieces and add the pineapple and juice on top of apples- this helps the apples from browning. Add grapes, nuts and mini marshmallows to the apple mixture. Combine the cool whip with the pudding mixture and then add all this to the apple mixture.

3. Chill at least 1 hour before serving.
