Teriyaki Steak

Today our family went to Fuji Safari Park - a zoo on the foothills of Mt. Fuji that has one of those drive-through safari tours. Thats me and Thing Two feeding a kangaroo - I've never pet a kangaroo before! We had a blast there (come on, who wouldn't have fun having lions and tigers and bears an arm's length outside of your car?) and I even planned for dinner before we headed out! Didn't have time to take a picture of dinner tonight since we got home so late on a school/work night, so you'll just have to just adore the kangaroo above!

I definitely need a new crock pot. I need to shop around and invest in a great one because I'm at the point in my life where I'm tired of buying half-ass products that die a year or two later. My crock pot hasn't bit the dust, but it does cooks funny - it tends to burn sometimes and dry out others. The reason I'm whining about my crock pot is because I think if I had a better one, tonight's dinner could have been a hit. I made a simple teriyaki beef dinner I found on this site that's devoted to crock pot meals. The ingredient list consists of pantry staples, which is always great when you are in a pinch, and the resulting sauce after it was cooked had a great flavor. My beef, however, turned out dry and blah, but I could definitely tell that it could have been much better had I been home and not let the crock pot cook as long as it did. Even if you are in a hurry and decide against using a crock pot, I think simmering some beef in the soy sauce mixture would give you a great tasting quick dinner. It is a very simple dish, nothing fancy by any means, but this would be a great sauce to be able to know how to throw together at a moment's notice.

Teriyaki Steak
Serves 6

2 - 2 1/2 pounds boneless chuck steak
1 teaspoon ground ginger
1 tablespoon sugar
2 tablespoons oil
1/2 cup soy sauce
1 clove garlic, crushed

Cut steak into 1/8-inch thick slices. Combine remaining ingredients in small bowl. Place meat in slow-cooking pot. Pour sauce over. Cover and cook on low for 6 to 8 hours. Serve with rice.
