For lunch today, I packed the kiddos a pita pizza pocket. I'm sure many of you won't think of this as actually "creative," but hey, I hardly ever buy pitas. Plus the creativity gene skipped me, which I'm miffed about. I have a squeeze bottle of pizza sauce on my fridge door, and combine that with a little bit of shredded mozzarella and microwave it for about 30 seconds, ta-da! A portable pizza! I added turkey pepperoni to Thing Two's pita since he's as carnivorous as his parents are. I would have added more toppings (or fillings?), but my kiddos aren't too crazy about that many pizza toppings other than cheese. I got a thumbs-up from them, so I guess they approved. Thats all that matters in my life :)

I'm not going to list this as an actual "recipe," but just as a school lunch idea. Thing One is a vegetarian, and I'm very proud of her convictions, especially at such a young age. She is only eight years old and has been meat-free for a full two years now. I have no idea how she has so much will power, she sure doesn't get it from me. Anywho, since she isn't a meat-eater, she doesn't buy school lunch very often, unless it happens to be pizza day at school. This has left me trying to be creative regarding lunch ideas for her, because PB&J every single day will drive anyone to drink, even an eight year old.
