Garlic Lime Chicken

With all of the baking and slightly "unhealthy" manner I've been cooking lately, its about time to balance it out with a few healthier meals. Tonight's dinner was a super simple dish I found on from a Weight Watchers board and the idea of breaking out the crock pot appealed to me. To tell you the truth, this dinner wasn't fabulous - its not something I would brag about and insist on preparing for company, but it wasn't bad either. I think the fact that it was very simple to put together, and most ingredients will probably be on hand at any given point, was what made me decide that I could make this again. It was very tangy and very salty, so maybe next time I will reduce the soy sauce and lime juice or just dilute it with some chicken broth. If you are stuck for ideas on what to make for dinner and have only a few things stowed away in your pantry, this one could definitely save you the trip to grabbing a #4 from Wendy's on your way home from work.

Garlic Lime Chicken
Serves 4

4 boneless, skinless chicken breasts
1/2 cup soy sauce
1/4 cup fresh lime juice
1 table Worcestershire sauce
1 garlic cloves, minced
1/2 teaspoon dry mustard
1/2 teaspoon coarsely ground pepper

1. Place chicken in bottom of slow cooker. Mix together remaining ingredients and pour over top of chicken. Cover and cook on low for 6 to 8 hours.
