Fettuccini Alfredo

For the next few days (or weeks...) we are celebrating my husband being back home by cooking some of his favorite meals. It makes me feel good that doing this for him makes him feel happy and "at home." I can't imagine how hard it must be for service members to be deployed away from their families for so long and have nothing cozy or comforting to get home to after a long day at work, so I try to keep this in mind when he is home and make up for lost time. He works so hard and spends so much time away from his family, and I always want for him to have the happy image of his home in his head to look forward to on those nights he might feel especially lonely.

His first night back we had steaks that he grilled, but number two on his favorites list is this fettuccini dish. That is always the order we have these meals when he gets back from any deployment - steak is always first and foremost (gotta love men...), but this fettuccini alfredo is the next anticipated meal. Our family loves this dish to pieces - when its Thing Two's birthday, he always picks this meal, its always one of the first things we make when the hubby comes home, and sometimes when we want something special this is what we make. Its not that this dish is fancy or hard by any means, but its just so good that we consider it "special."

The alfredo sauce literally takes minutes to put together - normally what I end up spending most of the preparation time on is sauteing either chicken or shrimp (or crawfish if I can find it for my coonass husband!). I use light ingredients to make our alfredo sauce and it turns out amazing (thats why in the close-up picture the sauce looks somewhat chunky - fat free cream cheese tends to do that). If you aren't scared of full-fat ingredients, by all means use it, I'm sure your dish will turn out even creamier and probably better. But, for the love of all that is good in this world, do NOT use the green-canned "parmesan!" I never, ever had the real stuff until I was an adult in my own house, and I always thought I hated parmesan cheese because the green canned stuff was all that I knew. Boy was I wrong, parmesan is one of my most favorite things in this world now! I'm sure most of you are laughing at how silly that may sound of me, but I'm sure there is at least one other person out there like me who lived a sheltered life!

Fettuccini Alfredo
Serves 6

8 ounces fat-free cream cheese
1 cup Parmesan cheese (fresh grated)
1 1/2 cups fat free milk
1/2 cup light margarine
1/2 teaspoon white pepper
1/4 teaspoon garlic powder
1/4 teaspoon ground nutmeg
1 box fettuccini noodles
Sautéed chicken, shrimp, crawfish, optional

1. Cook pasta according to package directions.

2. Melt cream cheese, parmesan cheese, milk and butter in saucepan. Add pepper, garlic, and nutmeg. Mix with pasta.
