Cucumber Dip

I love making spreads and dips for our family because Things One and Two are overly eager to dip everything and anything and eat it. Great way to make them eat veggies they otherwise would laugh hysterically over when you serve it as a snack. I found this Cucumber Dip recipe on a Weight Watchers board (yes, I get tons of recipes there!) and I was very anxious to try this out since my kids are gaga over cucumbers. The ingredient list is extremely plain and simple, and yet it combines so well together (I skipped the onion since no one in my house is a raw onion fan). The first day I packed a container of the dip along with carrots for their school snack, and the next day I thought to use up some of the pita bread in my fridge and made "fancy" sandwiches for the kids with mozzarella and prosciutto (minus the prosciutto for my vegetarian Thing One). The kiddos really loved the dip served both ways, so I'll claim this as a victory!



Cucumber Dip

8 ounces fat-free cream cheese, softened
1 large cucumber, peeled, seeded, and diced
1/4 cup onion, diced
2 tablespoons light mayonnaise
1/2 teaspoon salt
1/2 teaspoon pepper

Mix all together and serve with crackers, veggies, or as a spread.
