Believe it or not, I found this recipe on a Weight Watcher's board. Crazy, I know. But the fact that these little haystacks are teeny sized and, ideally, eating with portion control in mind, these shouldn't be too terrible for you, especially since it uses Fiber Once cereal. The real problem, however, is the portion control, which is my issue in life. Regardless, these little yummy treasures are SO cute and SO delicious! The only haystacks I've ever had in my life are the butterscotch/chow mein noodle ones my mom used to make, but I've never been a big butterscotch fan. Using min-muffin pans gives them a cute uniform shape, but if you prefer the haphazard haystack shape, by all means drop them by the spoonful on wax paper instead. These were so great I told my husband that I would make these and put them in treat bags for his next bake sale that he has. I command that you give these a try, it would be a shame to go on in life without these super easy treats!

Cookies & Cream Haystacks
Yields 24 haystacks

12 ounces Hershey's White Chocolate Cookies & Cream Candy Bars
3 cups Fiber Once cereal

1. Melt candy in microwave for 1 minute, stir, and cook for 1 more minute. Stir in cereal.

2. Drop by spoonfuls into mini-muffin pan. Freeze for 15 minutes or until firm. Store in freezer bags.
