Cheez-It Chicken

Tonight's dinner is another simple recipe I found on Weight Watchers. I've had it sitting in my "to try" collection for quite some time now and quite frankly, when I scroll through my MacGourmet program looking for ideas for dinner, I'm tired of seeing it in my list, untested! I suppose its fine to be inspired in many ways. I always buy those super-jumbo sized containers of Goldfish crackers, so I ended up using those instead. The chicken tasted pretty good - it's not gourmet by any means, but it made me think of a cheesy Shake 'N Bake. I bet this would be a huge hit for families with little ones - Thing One is a vegetarian, and Thing Two was moody over dinner, so I couldn't get a good reaction from him. Regardless, this was very easy to put together and I will probably make again when I'm running out of things in my pantry - its great to have a few dinner ideas for times like that!

Cheez-It Chicken
Serves 4

4 boneless, skinless chicken breasts
6 tablespoons fat free sour cream
3 ounces reduced-fat Cheez-Its, crushed
I can't Believe It's Not Butter Spray

1. Preheat oven to 350˚. Spray pan with olive oil cooking spray.

2. Smear raw chicken breast with sour cream (both sides), pat Cheez-It crumbs on both sides. Spray top with ICBINB spray. Bake for 30-40 minutes.
