Cajun Rice Pilaf

W.O.W. Thats all I have to say about this rice dish we had tonight! I found this recipe a while ago on a Weight Watchers board and I'm glad I'm finally getting around to making it. Its so, so simple to make and SO, SO good! I will definitely be making this all the time from now on! I did cheat a little bit and used the rice cooker rather than the stove top. What I did was combine all of the ingredients (except the rice) in a small pot and allowed to boil that way the bouillon cube could dissolve, but once that was done I dumped the mixture over the rice sitting in my rice cooker, turned it on, and voilá! Perfectly cooked, perfectly seasoned rice that is just a tad bit on the spicy side. For the Cajun seasoning I have to recommend Tony's Chachere's - its the only way to go! Definitely give this a try - you won't be disappointed!

Cajun Rice Pilaf
Serves 4

1 can chicken broth
1 beef bouillon cube
1 tablespoon olive oil
2 teaspoons minced garlic
1 teaspoon cajun seasoning blend (Tony's)
1 teaspoon Worcestershire sauce
1/4 teaspoon black pepper
1 cup rice

1. Combine all ingredients (except rice) in a pot and bring to a boil.

2. Reduce heat to low, add the rice, cover the pan and cook until rice is tender, about 17 minutes. Stir and fluff rice with a fork and serve. (Alternatively, cook rice in rice cooker)
