Apricot-Glazed Pork Chops

The hubs and I love, love, love to grill. Ok, well I love it when he grills and I then I eat. Grilling gives food such an amazing flavor that is hard to replicate in the kitchen, and its a very healthy way to cook meat. Can't beat having tons of fat melt off the food and drip down below! I found a simple, yet yummy sounding pork chop recipe on this blog not too long ago, and tonight it sounded like a great idea for dinner. I figured the pork chops would taste alright, giving the fact that the glaze has such simple ingredients, but I was blown away at how amazing this tasted! Sweet flavors go great with pork, and the sweetness of the apricot preserves on the chops, then grilled, man-oh-man did they work some magic together! I highly recommend that you try this soon - I will definitely be making these again in the near future!


Apricot-Glazed Pork Chops
Serves 4

4 pork chops
pinch of salt
freshly ground black pepper
1/3 cup apricot preserves (recommended: Polaner All-Fruit)
1 tablespoon prepared mustard
1/8 teaspoon ground ginger

1. Heat grill until nice and hot.

2. Season pork chops with salt and pepper.

3. Grill chops about 6-8 minutes on each side.

4. While the chops are grillling, mix together the remaining ingredients for apricot glaze.

5. Continuously brush glaze on each side of the chops, grilling another 6-8 minutes on each side.

6. Plate the pork chops and enjoy with a vegetable side dish!
