Peanut Butter Swirl Banana Bread

The over-ripened bananas sulking on my counter just begged to be used today. What better use for these sad bananas then good old fashioned banana bread? I perused my collection of banana bread recipes I have saved, and I decided to go for one that isn't old fashioned. I found an amazing sounding recipe on one of my most favorite cooking blogs - Peanut Butter Swirl Banana Bread. MMMM!! What an amazing combo, right?


This was a pretty fun dish to put together. Maybe its my unhealthy obsession with cream cheese - its mixed with the peanut butter to make the swirl. Or maybe its because the recipe is titled with the word swirl - it makes me happy. I loved almost every aspect of this!! My only problem, though, was the cooking time. About 35 minutes into baking (says to bake for one
hour) it started smelling like it was about done, and when I peeked at it, the bread was definitely a very healthy brown as if it was done. I did the toothpick test and it came up pretty much clean and dry, but the 35 minutes versus one hour baking time bothered me. I went ahead and took out the bread knowing it was minutes from burning and let it rest. When I cut into it, the swirly center was very gooey since the batter surrounding it didn't finish baking (see the picture?). That didn't stop me from eating it though! It tasted great, and I will most definitely be making this again, very soon in fact, but I will need to tweak the cooking time or temperature in order to get this bread out of the oven fully cooked and unburned. It could be just my oven is finicky, but keep an eye out on your bread when its time to bake it - you most definitely will want to try this yummy banana bread!

Peanut Butter Swirl Banana Bread
Yields 1 loaf

Peanut Butter Cream Cheese Filling
4 ounces cream cheese, softened
1/2 cup peanut butter (preferably crunchy)
1 large egg yolk
1/4 cup granulated sugar
Banana Bread
1 3/4 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1 cup mashed banana (about 2 large)
1 cup sugar
1/3 cup vegetable oil
2 large eggs

1. Preheat oven to 350˚. Lightly grease a 9x5 inch loaf pan.

2. Make the cream cheese filling. In a medium bowl, beat together cream cheese, peanut butter, egg yolk and sugar until smooth and fluffy.

3. In a large bowl, whisk together flour, baking soda, salt and ground spices.

4. In a medium bowl, whisk together mashed banana, sugar, oil and eggs. Pour into dry ingredients and stir until just combined and no streaks of flour remain. Do not over mix.

5. Pour half of banana batter into prepared loaf pan. Spoon peanut butter mixture on top, spreading it into as even a layer as possible. Pour remaining banana batter on top, again spreading it into an even layer.

6. Bake for 1 hour, until a toothpick inserted into the center of the cake comes out clean (or with a few moist crumbs) and the top springs back when lightly pressed.

7. Turn loaf out of the pan onto a wire rack. Cook completely before slicing.

Makes 1 loaf.
