Garlic Crostini

Whenever the hubs is away, we tend to have a ton of leftovers, especially when I accidentally double a recipe, like I did last night with the linguine. Since my microwave did most of the work tonight, I decided to "slave" over the hot oven and make some garlic bread.

This is another Paula Deen recipe, but this one isn't bad for you at all. Olive oil is great for you! This garlic bread took no time at all to put together and was such a hit...Things One and Two were fighting over who would get the odd piece that was leftover. Since we love garlic in ways that is probably illegal, I mixed some jarred crushed garlic in with the olive oil and then brushed it on the bread, making it way more garlicky (and way more delicious) than it would have been if I followed the directions exactly. Either way, it will be fantastic, especially if you have a saucy-dish to dip the bread in since it is a bit crispy. This is definitely a must-try!

Garlic Crostini

1 French baguette, thin
1/2 cup extra-virgin olive oil
2 cloves garlic, mashed
freshly ground black pepper

1. Preheat oven to 350˚.

2. Cut bread into 1/4-inch round slices. Place on baking sheet and brush each slice with olive oil. Season with salt and pepper; place in oven and bake until golden and crisp, about 15 minutes.

3. Remove from oven and let cool slightly. Rub each side with smashed garlic cloves.
