Broccoli and Garlic

I love broccoli, though the rest of the household strongly objects. I've been desperately trying to find new ways to cook it to encourage Thing One and Thing Two to not kick and scream every time the little green trees invade their personal spaces. When I saw this recipe on a healthy-cooking blog, I had to try it. Garlic is a big hit in my house, so how could I go wrong?

The good news is that its super easy to make, very garlicky (an A++ in my book), and the kids didn't mind it. They still don't like broccoli, but come on, they are kids...and they didn't ask for their portion to be drowned in cheese for once. This dish actually reminds me of the sauteed green beans that you get at a Chinese buffet, which I admit I have an unhealthy obsession with. The broccoli isn't soft and soggy like it tends to get when you steam it; it softened quite a bit, but still had a bite to it, a happy medium for me. If you prefer your broccoli on the softer side, you may want to let it cook slightly longer. I personally omitted the butter when I prepared it just to lighten it a teeny bit, but that is just a personal preference. I'm sure the butter would add a whole other dimension of flavor. Considering this is a Super-Food side dish that requires only a handful of ingredients and is amazingly flavorful, you would be missing out if you didn't try this.

Broccoli and Garlic

2 bunches of broccoli
6 cloves garlic, sliced
2 tablespoons olive oil
1 teaspoon unsalted butter
1/2 teaspoon red pepper flakes
kosher salt, to taste
fresh ground black pepper, to taste

1. Cut hard stems from broccoli. Place in strainer, wash and dry.

2. Slice garlic cloves very thin.

3. Heat olive oil and butter in a medium pot. Satueé garlic slices until golden brown (about 4-5 min.) then with a slotted spoon, remove from pot and set aside.

4. Add broccoli and seasonings and sauteé until slightly tender (about 6-7 min.). Taste it in case you need to adjust seasonings. Return garlic to pan with broccoli and seasonings and toss together.
